Cooked Cabbage
Basically the simplest and most eaten Solomon Island dish. This is cooked cabbage (Neka/Baera/Reko). The name changes depending on where you go.
I cooked it according to the “Solomon Islands Cook Book” book. There are many other ways you can cook this that are mouth watering and delicious.
INGREDIENTS:
1 $5 or $10 bundle (depending on the season)
2 TBSP coconut oil
1/2 tsp salt
1 TBSP chicken stock
Garlic and ginger
METHOD:
Fry garlic and ginger in oil
Add in cabbage
When cooked, add in salt, and chicken stock that is mixed in the coconut milk.
SERVE
Other variations include adding tomato, capsicum and onion.
